Here’s a recipe for a cool and healthy protein and fiber-packed spring-summer salad perfect for picnics, potlucks, or a quick and easy warm evening dinner. Enjoy!
Turkey, Apple and Quinoa Salad
3 cups cooked quinoa
1 1/2 cups diced turkey
1 large apple, peeled and sliced
1 cup celery, thinly sliced
1/2 cup packed celery leaves, chopped
3 tablespoons olive oil
2 tablespoons white wine vinegar
1 1/2 tablespoon Dijon mustard
Sea salt and ground pepper
In a large bowl combine quinoa, turkey, apple, celery and celery leaves.
In a small bowl, whisk together olive oil, vinegar and mustard. Add to quinoa mixture and gently mix to coat.
Season to taste. Serves four.
