Yummy Recipe and Holiday Hours

Where has this year gone?  It seems like it was just spring…then the days grew hotter and now they are shorter as we are coming to the end of 2016.  How are you doing with your personal health goals?  The end of the year is the perfect time to start thinking about 2017 and what you wish to achieve.  Whether it’s better control on your blood sugar, the loss of a few pounds, or better overall health…you can do it slowly but surely by making a plan and sticking to it.

But for now, let’s enjoy this special time with family and friends. Here’s a delicious recipe perfect for Christmas morning celebrations!  You can multiply it to make a larger batch depending upon the number of guests.

Gingerbread Pancakes   Serves 2

⅔ cup unsweetened almond milk

¼ cup egg whites

1 tablespoon blackstrap molasses

1 tablespoon chia seed

1 teaspoon pure vanilla extract

10 drops vanilla or regular stevia

⅔ cup flour of your choice – regular or gluten free.  Chickpea flour will make the pancakes high protein.

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground ginger

⅛ teaspoon ground cloves

Combine almond milk and chia seed and allow to sit for 10 minutes. Preheat a small non-stick pan on medium-low heat for two minutes.  Combine the dry ingredients in a separate bowl, then add to the wet ingredients.  Stir until just mixed.  Pour a quarter of the mixture into the preheated pan. Allow the first side to cook for 3-4 minutes, or until bubbles form and the edges begin to turn golden. Flip and allow to cook for another 1-2 minutes. Place cooked pancake on cooling rack and repeat with remaining batter. Serve with melted coconut oil or butter, maple syrup, chopped apple and pecans. Enjoy!

Holiday hours… Make your appointments early as next week we will be closed Friday and Saturday, December 23 and 24 so that our staff can celebrate the Christmas holiday with their friends and family.  We will be open regular hours on Monday, December 26 and for the rest of New Years week including Friday and Saturday, December 30 and 31.  And, we will be open Monday, January 2.

Please call our office for an appointment with acupuncturist Jennifer Lavoro L.Ac. She sees patients on Mondays, Fridays, and Saturdays.

Avoiding Holiday Stress

Greetings from Dr. Thorburn:

Like the classic Christmas song goes, “It’s the hap-happiest season of all!”  But at times, the holidays can be difficult and downright stressful.  Here are some healthy tips for avoiding holiday stress and making it your happiest season of all!

  • Keep nutrition in balance.  Be sure to eat ample portions of fresh vegetables and low-fat protein.  Try to keep carbs low and drink plenty of water.
  • Be nourished.  Make sure to take your vitamins and supplements daily. Missing them two or three days a week can really impact how you feel.
  • Don’t over commit.  How many parties did you plan to hit on Friday night?  Three open houses and a dinner, and all in different areas of town. How is that fun?  Think about what is practical to do, and make some healthy choices.  Rushing around in traffic can be a serious stressor.  Your real friends will understand.
  • Get plenty of sleep. With holiday gatherings and late night jaunts to the mall to shop for goodies, it’s easy to get caught up in the hustle and bustle.  Don’t neglect your zzz’s.
  • Stay away from toxic people. If there are family members who push your buttons (easy for them – they installed them!), be courteous but keep the visit brief.
